High in protein and sustainable, insects may just be the food of the future.

North Americans aren’t used to thinking of insects as food. But the average bug is at least half protein, by dry weight, and that means it compares well to other animal sources of protein. What’s more, bugs are sustainable—and they can taste great.

Ah, summer. A leafy tree. A comfortable hammock. Ice-cold lemonade. The chirp of crickets.
