The Witte Museum is serving a different kind of “hops” for its Salud! Culinary Nightsdinner series. Chefs Stephen Paprocki, Ernest Lopez and Pastry Chef of Eilan Hotel will prepare a three-course meal incorporating insects, a theme inspired by Curator of Archaeology Dr. Harry Schafer. Schafer, and Bug Vivant founder Meghan Curry, will lead diners in lessons about bugs and their untapped potential in the kitchen as sustainable protein along with their important history in the lives of hunter gatherers.
